Apricot Chicken Bake

*This recipe uses a seasoning blend found in the eCookbook, Mix it / Store it / Make it  ~ Entrees and Seasonings.  Click here to purchase and make the seasoning for your pantry!


6 boneless, skinless chicken breasts
1 10-ounce jar apricot preserves
1/2 cup Catalina dressing
1/4 cup My Secret Marinade Blend


  1. Preheat oven to 350°. 
  2. Combine the preserves, dressing and seasoning blend.  
  3. Place chicken in a 13x9x2 baking dish.  Cover each chicken breast with apricot mixture.
  4. Cover and bake for 1 hour or until chicken can be pierced with a fork.  
Serve over rice to catch all of the juices

Fill the Freezer: Dinner's in the Bag!
Fill 2 or three bags by doubling or tripling the recipe above. Place the ingredients for a single recipe into a gallon sized freezer bag, seal, label with name and date and freeze.  Repeat as many times as you like, filling the freezer with Dinner in a Bag!When ready to prepare, refer to the original recipe

Get the Kids Cooking:
Making frozen meals in a bag is a great time to get the kids involved.  They can fill bags, squish bags or even label bags if old enough.  Line up the supplies and let them help!
