Basil and Garlic Stuffed Chicken Breasts

1 Quick and Easy Spaghetti Sauce, prepared (recipe here)
3  pounds large skinless, boneless chicken breast (6 pieces) 
salt to taste, optional 
pepper to taste, optional
8 oz ricotta cheese 
2 tablespoons Basil and Garlic Seasoning Blend
1 cup mozzarella cheese, shredded  


  1. Preheat oven to 350 degrees. Prepare a 9x13 baking pan with nonstick cooking spray.  (if spaghetti sauce was not prepared in advance, begin making that sauce now)
  2. Slit a lengthwise pocket in each chicken breast, starting at the thick side, cutting approximately ¾ of the way through, season inside and outside of each breast with salt and pepper, if desired. (CLICK HERE  for pictorial on how to stuff a chicken breast)
  3. Combine ricotta with seasoning, mix well and place about 2 tablespoons of mixture inside each breast, using all filling. Arrange stuffed breasts in prepared baking pan; cover with spaghetti sauce.
  4. Bake for 35 to 40 minutes or until chicken is tender when pierced with a fork and juices run clear. Sprinkle mozzarella on top and return chicken to oven for 5 minutes until cheese is melted. 
Serve over pasta or rice as desired
