1 tablespoon oil
1 small onion, diced
3 bell peppers, your choice colors; red, yellow, green, diced
2 cups prepared Basil and Garlic Chicken (recipe here)
2 cups instant rice, prepared according to package directions
Soy sauce, optional
- In a large skillet, heat oil over medium-high heat, sauté onion and bell peppers for about 2 minutes. Add the cooked chicken and continue to stir in pan until chicken is heated through.
- Serve over rice. Add soy sauce to taste, if desired.
