1 rib celery, diced
1/2 cup diced green bell pepper
1/4 cup diced onion
2 tablespoons butter
2 cups precooked chicken, chopped or shredded
1 pound fresh mushrooms, sliced (may substitute canned, drained)
10 oz frozen peas
4 oz diced pimentos
6 tablespoons Basic White Sauce
14.5 oz can chicken broth
1 cup water
salt and pepper to taste
- In a large skillet over medium heat, saute the celery, green pepper and onion in the 2 tablespoons of butter. When tender, add the chicken, mushrooms, peas and pimentos. Stir to combine
- Add the sauce blend, chicken broth and water and cook until thickened, stirring constantly. Season with salt and pepper to taste.
- Serve over cooked pasta, toast or biscuits.
