Chicken Ala King

1 rib celery, diced
1/2 cup diced green bell pepper
1/4 cup diced onion
2 tablespoons butter
2 cups precooked chicken, chopped or shredded
1 pound fresh mushrooms, sliced (may substitute canned, drained)
10 oz frozen peas
4 oz diced pimentos
6 tablespoons Basic White Sauce
14.5 oz can chicken broth
1 cup water
salt and pepper to taste


  1. In a large skillet over medium heat, saute the celery, green pepper and onion in the 2 tablespoons of butter. When tender, add the chicken, mushrooms, peas and pimentos.  Stir to combine
  2. Add the sauce blend, chicken broth and water and cook until thickened, stirring constantly. Season with salt and pepper to taste.  
  3. Serve over cooked pasta, toast or biscuits.  
Serves 6
