Chicken Tortilla Rolls

4 chicken breasts, diced 
2  tablespoons Basil and Garlic Seasoning Blend
1 tablespoon oil 
1 avocado, diced 
1 cucumber, peeled and diced 
1 bunch green onions, chopped 
2 tomatoes, diced  
Ranch Style dressing
6 flour or corn tortillas


  1. In a skillet, saute chicken and seasoning in oil, until juices run clear. Set aside to cool.
  2.  In a mixing bowl, combine the cooked and seasoned chickenwith the avocado, cucumber, onion, and tomatoes; cover with enough ranch dressing to coat all items.
  3. Place mixture onto individual tortillas and roll up. Chill for 2 hours. Serve chilled. 

When making dinner tonight, add a few extra breasts so you are sure to have leftovers to make another meal.  After making the batch needed for this recipe, throw in more breasts while the skillet is still warm, season with Basil and Garlic Seasoning Blend and saute. Freeze in 2 cup portions (= approximately 1 pound cooked chicken) to use in soups, casseroles or other dishes calling for cooked chicken.  Try one of these suggested meal trails. (substitute this chicken for the slow cooked chicken these recipes call for)
