French Dip Sandwiches

*This is a Cook Once / Serve Twice meal using roast leftover from the Basic Pot Roast Recipe


3 cups leftover Basic Pot Roast, shredded
1 1/2 cups juice from leftover Basic Pot Roast
3 tablespoons butter or margarine
6 hoagie or sub rolls
12 slices provolone cheese
1 small onion, sliced and sautéed in butter

  1. Reheat the leftover roast and juice on stove top or in microwave.
  2. Meanwhile, position oven rack to highest level and preheat to broil. Spread butter or margarine on each side of rolls. Place on a baking sheet and broil 2 to 3 minutes until lightly toasted. Watch carefully while broiling. The rolls can easily go from un-toasted to burnt. Remove top half of each roll to a serving platter. 
  3. Using a slotted spoon, spoon roast on bottom half of each roll.  If sauteed onions are desired, place them on sandwich at this time. Top with 2 slices of cheese and return to oven until cheese is melted.
  4. Cover melted cheese roll with top half of roll. Serve with juice in small bowls to be served with individual sandwiches for dipping. 
Makes 6 sandwiches
