Fruity Chicken Salad


2 cups prepared and chilled Slow Cooker Lemon Chicken, diced (recipe here)
1 pint strawberries, sliced 
2 apples, cored and finely cubed 
2 cups grapes, halved 
2- 20 oz cans pineapple chunks, drained 
2- 11 oz cans mandarin oranges, drained 
1/2 cup chopped pecans 
1/4 cup bottled Poppy Seed Dressing
8  large lettuce leaves  


  1. Combine all ingredients in large bowl, except for lettuce leaves. If not using immediately, chill until needed. Can keep in fridge for up to 3 days. 
  2. Arrange leaves on serving plates, top with chicken mixture. Serve rolled up in lettuce leaves. 
Serves 8
