Grilled Cream Corn





This is one of my absolute favorite ways to use leftover corn on the cob!

*This recipe uses a seasoning blend found in the eCookbook, Mix it / Store it / Make it  ~ Entrees and Seasonings.  Click here to purchase and make the seasoning for your pantry! 

Ingredients
4 ears grilled corn OR 3 cups of corn previously removed from the cob
2 bell peppers, diced
½ white onion, diced
1 tablespoon olive oil
1 tablespoon seasoning of choice (recommendations: Lemon Pepper with Garlic Blend, Southwestern Style Blend, or Basil and Garlic Blend)
1 cup heavy cream

Directions

  1. (If using corn already removed from the cob, skip to step 2)Remove corn from cob by placing a flat end on a cutting board and using a sharp knife to cut kernels from top down. Cut as close to the cob as possible to get most of the kernel.
  2. Place oil into a warm skillet and add the diced peppers and onions. When these are tender, add the corn, seasoning and heavy cream.
  3. Bring to a boil, reduce heat and simmer until cream is reduced by half. Serve warm.
