1/2 cup Basic White Sauce Blend
1 1/4 cup water
2 tablespoons butter
2 egg yolks (all whites removed)
2 tablespoons lemon juice
salt and pepper to taste
- In a skillet over medium heat, melt the butter and whisk it together with the sauce mix and water.
- Let simmer for about 1 minute until the sauce begins to thicken; stir constantly.
- Add egg yolks and continue to constantly whisk. The sauce will thicken even more after about another minute.
- Remove from heat and stir in the lemon juice. Add salt and pepper to taste.
SIDE DISH ~ pour over steamed vegetables
ENTREE ~ Eggs Benedict
