Hollandaise Sauce

1/2 cup Basic White Sauce Blend
1 1/4 cup water
2 tablespoons butter
2 egg  yolks (all whites removed)
2 tablespoons lemon juice
salt and pepper to taste


  1. In a skillet over medium heat, melt the butter and whisk it together with the sauce mix and water. 
  2. Let simmer for about 1 minute until the sauce begins to thicken; stir constantly.
  3. Add egg yolks and continue to constantly whisk.  The sauce will thicken even more after about another minute. 
  4. Remove from heat and stir in the lemon juice.  Add salt and pepper to taste.  
SIDE DISH ~ pour over steamed vegetables
ENTREE ~ Eggs Benedict
