4 tablespoons olive oil
3 pounds chicken breasts, boneless, skinless
2 cups grape tomatoes (or 1 cup halved cherry tomatoes)
1 garlic clove, peeled, optional
3 tablespoons balsamic vinegar
3 tablespoons Basil and Garlic Seasoning Blend
salt and pepper, to taste
- In a skillet, heat olive oil over medium heat. Season chicken breast halves with salt and pepper, if desired. Saute each chicken breast for 5 minutes on each side or until juices run clear and the outside is lightly browned. Remove from pan keep warm.
- Saute tomatoes and garlic clove one minute. Add balsamic vinegar and Basil and Garlic Seasoning; saute briefly.
- Remove from heat and spoon tomato mixture over chicken breasts; discarding garlic clove.
Serving Suggestion: Serve over prepared Angel Hair pasta
