Mediterranean Chicken and Tomatoes

4 tablespoons  olive oil
3 pounds chicken breasts, boneless, skinless
2 cups grape tomatoes (or 1 cup halved cherry tomatoes)
1 garlic clove, peeled, optional
3 tablespoons balsamic vinegar
3 tablespoons Basil and Garlic Seasoning Blend
 parmesan cheese
 salt and pepper, to taste


  1. In a skillet, heat olive oil over medium heat. Season chicken breast halves with salt and pepper, if desired. Saute each chicken breast for 5 minutes on each side or until juices run clear and the outside is lightly browned. Remove from pan keep warm.
  2. Saute tomatoes and garlic clove one minute. Add balsamic vinegar and Basil and Garlic Seasoning; saute briefly.
  3. Remove from heat and spoon tomato mixture over chicken breasts; discarding garlic clove.
Serve warm 
Serving Suggestion:  Serve over prepared Angel Hair pasta
