Cold Mashed Potato Salad

double batch of Instantly Delicious Mashed Potatoes, prepared

6 hard-boiled eggs, chopped 
1 small onion, chopped 
2 stalks celery, chopped 
2 dill pickles, chopped or 3 Tbs. dill relish 
1/2 cup mayonnaise 
1 tablespoon mustard 
salt and pepper to taste


  1. Combine all ingredients in a large bowl, gently stir and refrigerate.  Serve chilled.
