Homestyle Quinoa

Ingredients

1 cup quinoa
1 1/2 tablespoons My Favorite Roast Seasoning Blend
2 cups water
OPTIONAL:
Assorted vegetables of choice

Direction
  1. Bring water to a boil.
  2. Add quinoa and seasoning. Simmer for 10-15 minutes, or until the liquid has been absorbed by the quinoa.
  3. If adding vegetables, heat them as desired (steam, sautee, etc…) Add them to the finished quinoa dish and serve warm.

Tami's Tip: Blends You Can Bag!
When it comes time to get dinner on the table, many times I default to the easiest side dish possible.  This is why I decided to store the dry ingredients for this recipe in a jar on the shelf with my other canned goods, like green beans and corn.  Quinoa increases the fiber and protein content of any vegetable and I can pour the jar of pre-seasoned grain into 2 cups of boiling water just as fast as I can heat up a can of green beans.  Combining the 2 together makes a healthy side dish I can feel good about!
