Loaded Potato Casserole

1/2 cup chopped green onions 
1/2 cup light sour cream 
3/4 cup low-fat shredded cheddar cheese, divided  


  1. Preheat oven to 350 degrees. 
  2. Add the onions, sour cream, and ½ cup cheese to the freshly prepared (or reheated leftover) mashed potatoes.
  3. Spoon mixture into a greased 8x8 baking dish; top with remaining cheese.
  4. Bake 20 minutes or until warm through.
