Basil and Garlic Pesto Pizza

1 precooked pizza crust
prepared Basil and Garlic Pesto (recipe here)
shredded mozzarella cheese
fresh tomatoes

  1. Preheat oven according to package directions for the precooked pizza crust
  2. Spoon a small portion of the prepared pesto onto the crust (this is instead of the standard red pizza sauce)
  3. Top with shredded mozzarella and slices of tomato
  4. Bake in preheated oven for about 10-15 minutes, or until cheese is melted and edges begin to turn golden brown. 
A small amount of pesto is all that is needed.  This is actually a little TOO generous {oops!}

This individual sized portion is perfect for snacks or small lunches OR to make personalized versions of the pizza.  The kids like it with pepperoni...but I like tomatoes only!

Tami's Tip:
By keeping the prepared pesto in the fridge, you can make mini pizzas for a quick lunch or after school snack.  One batch of the pesto made as directed here, will cover several regular sized pizzas.  Be careful to not be too generous with the sauce portions.  A little goes a long way.
