Dinner time decisions are best made in advance, but sometimes we need a little help.  
Each week I'll feature 7 days of meals using Cook Once / Serve Twice concepts.
In addition, I'll share my thought process 
so you can learn ways to stream line your dinner time decisions
...or just use mine! 

{NOTE: I post my meal plans the week after I followed them.  
This way I can show you pics of finished dishes AND 
I can show you how I adjust my plan as the week goes on.
...YEP, we don't always follow the plan but the plan helps me get going in the right direction!}

What's in my freezer?

  • Whole, cut up chicken
  • Chicken breasts
  • 1 large steak

  • assorted frozen veggies

What do the grocery store sales have to offer this week?

Just shopping for the basics this week so I can save on the grocery budget.

What does my calendar say about my Dinner Time Decision making?

Days I need dinner ready when I walk in the door:
  • Wednesday (quick turn around between Food Bank time and choir practice at church)
  • Thursday (in Dallas for a lunch meeting...that will put me home later than normal)
Days I have time to cook:
  • Tuesday is a good day to cook
  • I've got time on Friday too
Days when dinner will need to serve more people: 
  • Monday was Labor day so I planned for friends to be here...plus Matt will be home from college for the weekend. 
Days when dinner will be for fewer than normal: 
  • Wednesday thru Saturday of this week...just 3 of us.  


Secret Swedish Meatballs
(used the meatballs I had in the freezer)
Steamed Veggies

(made the pasta and added some chicken I sauteed on the stove top)

Pot Roast with Creamy Gravy
(used the 'dinner's in the bag' I had in the freezer)
Simply Creamy Slaw
Instantly Delicious Mashed Potatoes
{the slaw and the mashed potatoes were made from blends I had bagged and stored
for a fast fix on a night like this!}
{Sometimes dinner is dinner...and not a photo spread!  Yep...this is a typical fix it and set it out kinda' night!}
Orange BBQ Chicken
(one of the pre-bagged dinners I have in the freezer)
Tossed Salad
Yep...that was the plan for Thursday, but last minute change of plans
found me having a date night with hubby after lunch meeting in Dallas.
So... kids were on their own.
I'm sure they ate...something...probably.
 Oh sure they did!  I noticed the missing frozen pizza from the freezer the next day {grin}
Hamburger Patty
(just put preformed patties in the oven at 400 and bake 8-10 minutes on each side)
Creamy Mushroom Gravy
Sauteed Corn with Mushrooms and Cilantro

Family meal out.
