Pesto Pasta with Tomatoes and Pine Nuts

Angel hair pasta or thin spaghetti, prepared according to package directions
prepared Basil and Garlic Pesto (recipe here)
fresh tomatoes
additional pine nuts
shredded parmesan cheese.

  1. Place prepared pasta in a serving bowl. (Portions determined by the number of people you desire to serve.  See pasta package to determine serving sizes)
  2. Toss the prepared pasta with an adequate portion of the prepared pesto.  Start with less than you think you will need and toss until noodles are covered.  The pesto is flavorful, so you don't need a lot to get the flavor.  Consider using a little extra olive oil to make the pesto cover more pasta.  
  3. Slice or dice the tomatoes and toss, along with any extra pine nuts or parmesan as desired.  
Can be served warm or cold.  

Add a little extra olive oil to stretch the portion of pesto needed.

Use whatever tomatoes you have on hand (regular or cherry)
This is a single serve portion made for a quick and light lunch.
Keeping prepared pesto on hand makes this an easy option for one or a full family side dish option.
