Tortilla Soup





This soups has the flavor of an all day simmer but is easily prepared in less than 30 minutes.

The soup blend featured can be packaged in bulk for multiple uses or bagged as single mixes so you have a fast answer to 'what's for dinner' sitting in your pantry at all times!







INGREDIENTS
7 tablespoons of the Tortilla Soup Seasoning Blend* (or one single use recipe)
5 cups water
1 14.5-oz can diced tomatoes
OPTIONAL
1 cup of precooked and shredded chicken


DIRECTIONS

  1. Place all of the ingredients in a soup pot and bring to a simmer.  Continue to simmer for 15 minutes.
  2. To serve, consider topping each bowl with a dollop of sour cream, some fresh diced tomatoes and avocado, and a handful of shredded cheddar cheese.  OR…serve just as it is and enjoy the great flavor of this simple soup!
The Story...
Years ago when I was a young wife and mom, one of my favorite things to order from our favorite mom and pop Mexican restaurant was Tortilla Soup.  One day I came across a recipe that sounded like it was very similar to that favorite menu item, but the broth was made from scratch and the process to make the soup was a little time consuming, so it remained a ‘recipe I’ll try someday’ for the longest time.  Eventually the little restaurant closed and I became desperate for that flavor.  After making it from scratch once, I was determined to make it something I could cook up in minutes instead of hours.  The result is this seasoning blend!
