Spanish Rice (Mix)

I've had a LOT of requests for this recipe lately so I moved it up the priority list!  This is a homemade version of a packaged mix many people buy at the grocery store.  I love that I get to decide what ingredients are used for this mix.  From what kind of chicken base I use (salt free or not / msg free / organic or not, etc...) to whether I use brown rice or white rice ~ it's my choice and now you can make your own choices!






INGREDIENTS
(find some online suggestions for spices here)
1 tablespoon chicken broth powder
1/2 teaspoon salt
4 teaspoons tomato powder
1 teaspoon smoked paprika
1 teaspoon garlic powder
2 teaspoons onion powder
1 cup rice (long grain or brown)
{the above ingredients can be bagged as a mix and stored in the pantry...rice bagged separately}
2-3 tablespoons oil
2 - 2 3/4 cups water

If you plan on making several pre-bagged mixes, I highly recommend getting the larger container.

DIRECTIONS
  1. In a large skillet, heat the oil over medium high heat.  Add the rice and stir fry until it is lightly toasted.
  2. Add the water along with the spices, stir and let simmer until rice is fully cooked.  
    1. amount of water = 2 cups for long grain rice OR 2 1/2+ cups for brown rice.  The brown rice may require even more water, so just add up to 1/4 cup more if needed as it cooks. 
    2. cooking time = approx. 20 minutes for long grain rice and up to 35 minutes for brown rice.  
  3. Serve warm as a side dish.  

ADD IN IDEAS:
Make this an entree by adding the following items after the rice is cooked:
  • 1 pound cooked ground beef or turkey 
  • 1 14.5 oz can diced tomatoes
    • toss together and then serve with shredded cheese and sour cream if desired.  


Tami's Tip:
It's tempting to replace regular paprika in recipes that call for smoked paprika, like this recipe here, but I encourage you to add smoked paprika to your standard spice rack because it makes a world of difference when used as directed.
