Single Serving Fajita Meals for the Freezer

Usually my 'Dinners in a Bag' are family sized.  However, I do keep some single serving portions in the freezer as well!  They are really handy for a variety of reasons like:
*Replaces packaged frozen meals my teenage boys like to make for late night snacks! {much healthier!}

*Quick and easy dinner for me when I'm the only one home! 

*Plan 'b' dinner when plan 'a' falls apart







INGREDIENTS

Quart Sized Freezer Bags
Precooked Chicken 
(grill and slice fresh chicken OR purchase pre-grilled chicken from the freezer section of the grocery store)
Bell Peppers, sliced
Onion, sliced
True Lime
Liquid Smoke
Garlic Powder

DIRECTIONS
  1. Set up an assembly line of the ingredients in the order listed above.  
  2. In one bag put enough chicken, bell pepper and onion to equal a desired 'single serving' portion.  
  3. Shake the True Lime into the bag, using a portion to taste. (generous but not overpowering)
  4. Sprinkle enough of the liquid smoke to give the fajitas a hint of smokey flavor. (be careful...not too much)
  5. Add as much garlic as you desire, seal the bag, label and freeze! 
  6. When ready to prepare, pour the frozen contents into a hot skillet that has been prepared with cooking oil.  Stir fry for a few minutes until the chicken is warmed through.  Serve in a warm tortilla or over a bed of crisp lettuce.
